I must say that Guangzhou is one of my favorite places in mainland China because of the authentic taste of old Canton (老廣的味道). Old Cantonese Cuisine, also known as Yue Cuisine (粵菜), has a long history going back to thousands of years. The essence of Cantonese cooking is always the freshness of ingredients. Cantonese cooking involves a variety of cooking methods and techniques including steaming, stir frying, shallow frying, braising and deep frying. The technique is to enhance the natural savour of ingredients and to create a delightful and balanced mouthfeel.
